Started in 2026, by friends who wanted to bring not only good food, but something different to the area; Papa Juancho’s brings a playful, food-truck twist to classic street food. We use fresh ingredients, bold seasonings, and recipes inspired by our roots. Whether it’s lunch on the go or a late-night bite, we’ve got you covered. Serving classic food favorites— Decadent Potatoes, loaded tacos, and more — all made fresh from Papa Juancho’s recipes. Catch us around town bringing good vibes and great eats!

About The Chef
Hi, I’m Raul—half the wheels behind Papa Juancho’s, the food truck, and most of the bad ideas that somehow turn into good food.
I cook bold, comfort-heavy food for people who are hungry, tired, or just need something that hits. No shortcuts, no boring plates, and absolutely no pretending this is “elevated.” It’s loud food, made with heart, and served by someone who cares way too much about flavor.
Papa Juancho’s started because I love feeding people and making them smile—sometimes with food, sometimes with unhinged specials, sometimes with both. Some days I’m slinging plates like a machine, other days I’m reminding myself I’m not in my 20s anymore. Either way, the goal never changes: make damn good food and have fun doing it.
